November 1 - World Vegan Day
Vegan cooking is so much fun. I love tricking people that a dish has meat or dairy in it lol. There are heaps of collections on Cookidoo that are vegan. The Plant to Plate collection is just one. Alyce Alexandra has a fabulous range of vegan recipes too.
November 3 - World Sandwich Day
A Thermomix can be super helpful for making epic sandwiches. From the bread, to the condiments, and everything in between. Like mayo, pesto, chutneys, caramelised onions…just to name a few. I have a recipe I really should add to the blog for a chickpea sandwich spread. It’s got chickpeas, pesto, mayo, chilli flakes, and I add some celery and almonds to give it a bit of crunch. You can do this with any chicken filling too. Shred the chicken with some pesto and mayo etc. You are only limited by your imagination.
November 6 - Nachos Day
Nachos would have to be one of my FAVOURITE meals. Like seriously…corn chips for dinner…yum!!!!!! I’ve included my recipe for the best chilli here. It’s a slow one so not a quick weeknight dinner. When I want something quicker, my go to is this vegetable chilli, still served with cashew sour cream and guac…and corn chips of course. But for the meat eaters….I’ve included a beef nachos from Cookidoo here for you.
November 10 - Vanilla Cupcake Day
November 15 - Bundt Day
Bundt cakes always make me think of My Big Fat Greek Wedding lol. If you don’t get that, then you should definitely watch the movie. There are lots of bundt cakes on Cookidoo, and I am no cake expert, but I am sure you could just cook any cake in a bundt tin. They just look impressive. You can get a beautiful rose gold bundt tin from the mix shop.
November 22 - Espresso Day
What would Espresso Day be without an Espresso martini!!!!! I literally just searched espresso in Cookidoo and these were the first three recipes that popped up. I do love these espresso baked beans. They are definitely worth giving a go. The 3rd recipe here is an espresso caramel sauce, which I have not tried, but now I really want to lol.
November 26 - Laksa Day ( the last Sunday in November)
I absolutely love tucking into a Laksa. The first pic is a Chicken Laksa from Cookidoo. The 2nd one is Chiang Mai Noodles, so technically not a laksa…but it is definitely similar…and it’s delicious…and it’s super easy. Make your own red curry paste to go with it. And freeze some extra portions for an even quicker and simpler dinner next time.
November 30 - Mousse Day
I started with the healthy one here. It’s made with avocado and coconut cream, and it’s absolutely delicious. Definitely give it a try! The middle one is Sous-Vide Strawberries with White Chocolate Mousse. A little bit fancier. And how cute are they in the little jars. Then we have the class Chocolate Mousse…totally decadent. Or another one I didn’t picture here is the Milo Mousse. It went viral when I first got my Thermomix…everyone was making it. It’s delicious…but also super rich.
